President of the Republic on the Opening of the New Ice-Cream Factory of the ''Tallinna Külmhoone'' on June 17, 1999

Dear Managers of the Tallinna Külmhoone and first and foremost, dear Estonian children, the greatest ice-cream lovers who can best appreciate your products!

A little while ago I shook the hands of the Estonian university graduates, and this is bound to turn one's eyes to the future. I wish that your factory would feel, just like that lovely group of young Estonians, who is now energetically and confidently stepping into the new world, into the new century and first and foremost into the uniting Europe, that we here have made the first step. The step that we all can be proud of.

You have created new jobs for Tallinn and Estonia. You have built a modern factory, which I have not yet seen, but - but I can see this light blue wall behind my back, and I hope that the products of your factory are of such quality that they will find their way to the international market, which answers the EU requirements even today.

I would very much like you to think what it means - not only to produce good, high-quality ice-cream, because this is what we have done in Estonia for a couple of hundred years already, and I could bring you some good old cookbooks where you would certainly have something to learn from. But I want you to keep in mind that it is your task to conquer new markets.

We all know what saldejums* means, but now the time has come for everyone to know the name and taste of the simple Estonian jäätis (ice-cream).
